BLT Egglets
Introducing a delectable BLT Egglets recipe that brilliantly combines the comfort of boiled eggs with the irresistible allure of smoky bacon. These Egglets are not only a flavorful treat but also a versatile option, perfect for satisfying your cravings or as a convenient grab-and-go meal. With the addition of a zesty dressing featuring mayo, chives, hot sauce, and red wine vinegar, every bite is a burst of taste and texture. Topped with vibrant cherry tomatoes and crispy Romaine lettuce, these Egglets redefine snack time.
INGREDIENTS:
6 eggs
2 slices bacon, cut into quarters
4 tbsp. sugar free mayonnaise
1 tbsp. chives, chopped
1 tsp. hot sauce, of choice
1 tsp. red wine vinegar
salt
freshly ground black pepper
2.6 oz. (75g) cherry tomatoes, quartered
handful Romaine lettuce, shredded
DIRECTIONS:
Place eggs in a saucepan and cover with water. Bring the water to the boil then hard boil the eggs for 10 minutes.
Meanwhile, heat a large non-stick skillet over medium heat, add the bacon and cook for around 6 minutes, stirring occasionally until crisp. Remove from the heat and transfer the bacon to a plate line with kitchen paper.
In a medium bowl, whisk together the mayonnaise, chives, hot sauce and vinegar, and season with salt and pepper.
Peel and halve the eggs. Spread the mayonnaise mixture on the cut side of one egg half.
Top with tomatoes, lettuce, and bacon; then top with another egg half.
Continue this process with the remaining eggs. Season with salt and black pepper and serve.
